Our story begins in Zapopan, Jalisco, where our grandfather—el abuelo—ran a hardworking carnicería that helped support a family of ten. His butcher shop stood on its own, sharing a simple building with a small convenience store. The nearest mercado was a ten-minute walk away, but neighbors came directly to him because they trusted his skill, his honesty, and the quality he delivered every single day.
Inside that modest shop, he crafted the original version of our family’s fresh chorizo. His spice blend was rooted in tradition, shaped by the flavors of Jalisco and the methods passed down through our family. Over time, his chorizo became a quiet staple of the neighborhood, tied to the rhythms and tastes of Zapopan.
Years later, our parents came to the United States, where we were born as the first generation of our family in this country. Our heritage is a blend of two cultures—our father from Mexico and our mother from Guatemala—and we grew up embracing all three identities: Mexican, Guatemalan, and proudly American. We were raised in a lower-middle-class household, learning to work hard, stay humble, and appreciate the opportunities this country gave our family.
For two years, we lived back in Mexico, reconnecting with the sounds, smells, and traditions of Zapopan. Those years grounded us. They reminded us of our grandfather's work ethic, our family's resilience, and the cultural richness we carry from both sides of our heritage. And through it all, we never stopped loving the country we call home—the United States—where our dreams took shape.
As adults, we felt a responsibility to carry our grandfather's legacy forward—but also to adapt it for a new generation and a new country. Some of the spices he used in Mexico couldn't be exported to the U.S., so we created our own signature spice blend, crafted from high-end, carefully sourced ingredients that honor the spirit of his original recipe.
We also choose leaner cuts of pork, creating a healthier alternative while preserving the depth, aroma, and soul of the chorizo we grew up with. And just like our grandfather, we keep everything small-batch and artisanal, because quality is something you protect with your own hands.
Every batch we make is a bridge between generations: from our grandfather’s carnicería in Zapopan, to our Guatemalan-Mexican-American upbringing, to our lives here in the country we love—the United States.
We share this chorizo with pride and gratitude. It carries the warmth of our family, the richness of our culinary cultures, and the belief that food has the power to unite us—through flavor, through aroma, and through the stories we pass down.
